Here’s a very unique story for The Danish Pioneer Newspaper’s readers about the adventures of the “Ultimate 12-Hole Æbleskiver Pan” and how Danish Æbleskiver became known as “Wilkinson’s” in New York.
Shannon Wilkinson, a consulting chef and former Top Chef culinary producer, was so impressed with Vagn Jensen and Ed Andersen’s Ultimate 12-Hole Æbleskiver Pan from Minnesota that in 2009 Wilkinson introduced the larger pans and the famous round Danish pancakes to “Henry Public”, an old-time Cobble Hill, Brooklyn, New York saloon “serving the finest and best in food and cocktails”.
Today, Henry Public is still serving the Danish Æbleskiver — by the way the Danish treats are now known on the menu as “Wilkinson’s” in tribute to Shannon Wilkinson – and the æbleskiver are a very popular dining item, the staff at Henry Public informs The Danish Pioneer Newspaper. Henry Public still uses the 12-hole æbleskiver pans and say they are great. Diners can get the “Wilkinson’s” all the time and you don’t have to make reservations. An order of 6 “Wilkinson’s” served warm with rum-caramel sauce costs $9.00. Henry Public offers the æbleskiver with jam at their Brunch only.
The “Wilkinson’s” at Henry Public have been named one of the best dishes on TimeOut New York’s Top 100 List, just to name one of the many compliments bestowed on this reinvented Danish treat.
